This is one of our very favorite breakfasts, thanks to my husband's Aunt Savina. She is Swiss-Italian and says that this is a traditional Swiss breakfast or dessert. She said, "Traditionally it is mixed in the evening and left in the fridge overnight so that the oats and dry fruit can absorb all of the liquid. You can still mix it just before eating, it will just be more chewy." We have adapted her recipe slightly in order to fit our needs (like, tripling the batch!). Yum!
Aunt Savina's Bircher Muesli
2 1/4 cups plain whole milk yogurt
3/4 cups rolled oats
3-4 tablespoons honey, preferably raw
1/4 cup raisins
1 large unpeeled apple, scrubbed and shredded
1/3 cup almonds, chopped or sliced
1/4 cup lemon juice
1/2 teaspoon cinnamon
Combine all ingredients and mix well to combine. Place in refrigerator overnight and enjoy in the morning! Garnish with additional nuts and fruit, if desired. Serves 4.
