Making your own almond milk is so quick and easy! It is frugal and you get to choose what you put in it (ie: no extra additives!).
Homemade Almond Milk
1 cup almonds, soaked in water overnight and drained
4 cups water
splash of vanilla
Place almonds in a small bowl, cover with water and leave over night. In the morning, drain and rinse the almonds. In a blender, add drained almonds, water, dates, and vanilla. Blend on high for 2-3 minutes, or until almonds are completely broken up. Line a fine mesh strainer with a clean kitchen towel and place it over a big bowl. Slowly pour in the almond milk from the blender and let sit 20-30 minutes until strained. Store the strained almond milk a jar in the refrigerator for 3 days. Use in any place you would normally use cow's milk. Use the leftover almond pulp in muffins, cookies, etc. or freeze for later use.
