Gluten Free Fluffy French Toast


Today we're celebrating this little guy's third birthday! We started out this morning with some gluten free french toast. It was yummy! He was so excited to blow the candles out. You would have never known it wasn't birthday cake :) I love to see such excitement and passion for life. We'll be doing more festivities this weekend including a birthday party and some simple Easter celebrations. I hope you all have a fabulous weekend - I'll be back on Monday! xoxo



Gluten Free Fluffy French Toast

1/4 cup gluten free flour mix (or whole grain flour for regular french toast)
1 cup milk
3 eggs
pinch of salt
1 teaspoon cinnamon
1 tablespoon vanilla (we love vanilla)
1 tablespoon coconut sugar

Whisk the flour and milk together. Add in the rest of the ingredients and whisk well to combine. Dip slices of gluten free (or regular) bread into the batter and cook on a heated pan brushed with butter or coconut oil to prevent sticking (whisk batter in between batches to reincorporate ingredients). Flip after a few minutes and finish cooking. Top with butter, maple syrup, and fresh berries. YUM!

(If you want to do this half gluten free, half regular - make the recipe as written, but dip your gluten free bread in first. When you've made enough gluten free french toast, begin dipping your wheat bread in the batter and you've got a happy hubby!)
