I seriously feel like the best mom ever for coming up with this recipe! I hit a stroke of genius as I was being creative in the kitchen this morning. See, I made a HUGE batch of yogurt which turned out really runny, so we've been drinking it instead of eating it in a bowl. I thought..."Hey, why not turn some into icecream?" I looked at what I had in the fridge and came up with this fun variation of icecream (frozen yogurt, really). It's a great way to get some probiotics in your kids as well as avocados - if your kids are like mine and are picky about avocados, this should win them over...they'll never know! I hope your kiddos love this just as much as my kids did!! This totally passes for dessert even though it is super healthy.
2 ripe avocados
1 tablespoon vanilla
raw honey, to taste
Blend yogurt, avocados (skinned and pits removed), vanilla, and raw honey (I put a few swirls so the icecream was tart and barely sweet) until mixed. Pour into icecream maker and make according to manufacturer directions. Serve and enjoy!!
