Pork and Veggie Frittata (GAPS)

This has become one of our favorite ways to eat eggs. I make this recipe and then we eat it for two breakfasts and some snacks, so it makes a lot. It is a great way to switch up all of the egg eating we do! You can add anything to this...it is pretty flexible!

Pork and Veggie Frittata

1/4 cup butter
1 pound ground pork
1 onion, finely chopped
1 zucchini, finely chopped
1 red bell pepper, finely chopped
3-4 cloves garlic, finely minced
1 teaspoon dried basil
1 teaspoon dried rosemary
1 teaspoon dried oregano
16-18 large eggs, beaten
salt, to taste

Preheat oven to 400 degrees. Melt butter over medium heat in large skillet and brown pork with onions. Add zucchini, bell pepper, garlic, spices, and salt to taste. Divide meat and veggie mixture between two skillets (I heat my other skillet up with some additional butter and simply divide the mixture in half). Pour half of the egg mixture into each skillet and cook on medium heat for 2-3 minutes. Transfer to oven and continue to cook for 10-15 minutes or until eggs are cooked through. Remove from oven, slice, and enjoy!
