I love this method of making coconut milk. It is very quick, easy and less time consuming than actually using a whole coconut.
Homemade Coconut Milk
4 cups hot water
1 to 1 1/2 cups shredded coconut
Place water and shredded coconut in a blender. Blend on high for 2 minutes. Pour mixture through a fine mesh strainer and press with a spoon to get all of the milk out. Store milk in glass jars in the refrigerator and use in any recipe that calls for milk. Coconut milk keeps for a few days. Place leftover coconut pulp in freezer or refrigerator and use in muffin/bread recipes if desired.
