GAPS Hot Chocolate

It has been chilly here in Arizona...hooray! Which means...it is hot chocolate weather. We only get a few days a year that are truly deserving of hot chocolate, so we've been indulging the last few days. This is delicious! I am a hot chocolate lover - I probably drank it every day in High School along with a shot of caramel flavoring and whipped cream...not exactly healthy...I can't even imagine the sugar content! The wonderful thing about this hot chocolate is that it is actually nutritious - being full of good fats and natural sweeteners. Then, if using a high quality cocoa powder (I use this one), you are also getting the incredible benefits of cacao. Cocoa is approved for more advanced GAPsters, but it doesn't seem to bother us at all. Instead of using cows milk which is not approved for GAPS because of it's difficulty to digest, we use coconut milk. The cocoa has a nice rich taste that covers the flavor of the coconut very well. YUM! This would be incredible with homemade marshmallows.


GAPS Hot Chocolate

3 cups coconut milk
3 tablespoons cocoa powder
1 tablespoon coconut oil
3 tablespoons honey
pinch of salt
1-2 teaspoons vanilla

Combine all ingredients except vanilla in a hot chocolate maker. Turn on, allow to heat and mix. When done, add vanilla, froth and serve. If you don't have a hot chocolate maker, simply warm all of the ingredients except the vanilla in a pot over medium heat, stirring often. Remove from heat, stir in vanilla, and serve.
