Bolognese Pasta Sauce

This is the yummiest Bolognese pasta sauce. It goes perfectly atop spaghetti squash, making a yummy grain-free GAPS meal. I love how the sauce is packed with veggies...it means even if my kids don't eat the "spaghetti" they are still getting a good portion of vegetables in their meal. I didn't realize how much I'd missed Italian flavors until I started experimenting with this sauce. I have another version using less meat here


Bolognese Pasta Sauce

2 pounds organic meat (grass-fed is best)
1/2 cup butter or coconut oil
1 large onion, chopped
6 large carrots, chopped
6 celery stalks, chopped
1 red pepper, chopped
1 large zucchini, chopped
4 tomatoes, chopped
4 teaspoons salt
4 teaspoons oregano
4 teaspoons basil
6 cloves garlic, minced
1 can tomato paste

In a large pot, melt the butter and brown the meat. Stir in all of the chopped vegetables when the meat is no longer pink (I like to chop them up with my mini food processor which makes them very small so my children don't notice them). Add in seasonings and tomato paste, stir well. Bring the mixture to a boil then let simmer for 30 minutes. Serve over top of spaghetti squash or pasta and enjoy!
