Our Favorite Buckwheat Waffles (Gluten, Dairy, Egg, Nut, Soy, Corn Free)

I've been wanting to post this for awhile so here it is! This is our favorite waffle/pancake recipe. It is really easy to make, is allergy free, and is super yummy. It crisps up like a regular waffle and if making pancakes, they are easy to flip (sometimes allergy free pancakes are absolutely horrible to flip!). We love to top these with butter and maple syrup (when we're eating dairy) or coconut butter and maple syrup. These are gluten free, grain free, dairy free, egg free, soy free, corn free, and nut free.

Buckwheat Waffles

In a blender combine:

2 cups raw buckwheat groats

2 cups rice milk or water

Blend until mixed well, then add:

2 tablespoons coconut oil

2 tablespoons maple syrup

1 teaspoon baking soda

1 teaspoon real salt

4 tablespoons flaxseed meal + 12 tablespoons water, mixed and gelled*

2 teaspoons vanilla

Blend until combined. Pour into greased waffle iron and cook until done. If making pancakes, pour onto a hot, greased griddle. Flip when bubbly, and cook other side until done.

*Or use 2 eggs
