I am a waffle lover. Like, big time. During my last Whole30, they were all I craved!! Hehe. Since being gluten free, and then being egg free while baking (to accommodate my little one's allergy), I have been on a quest to find the perfect waffle. I think it is safe to say I have found it! This recipe is delicious and I think you'll be impressed. It is crispy, not gummy, and is all the things you love in a waffle - without the allergens! Top it with butter and maple syrup to experience true joy! This is a really fun indulgence!
Gluten Free, Vegan Waffles
3 cups gluten free baking mix*
1 teaspoon baking soda
1 teaspoon salt
2 tablespoons ground flax seed + 6 tablespoons water, mixed
3 cups unsweetened non-dairy milk (rice, almond, coconut, hemp)
2 tablespoons olive oil
In a bowl, combine all ingredients and mix well, adding more liquid if needed. Pour 1/4-1/3 cup at a time into a heated waffle iron and cook until ready. Top with your favorite toppings and enjoy!
DIY Gluten Free Baking Mix
2 cups brown rice flour
2 cups white rice flour
2 cups sweet rice flour
2 cups tapioca starch
1 tablespoon xanthan gum
Combine flours and xanthan gum in a large jar or gallon size Ziploc bag.
*I have only tested these waffles using the DIY mix written above. Your results may vary if you choose to use a different blend of flours. The tapioca starch is what gives the waffles the yummy crispy goodness.
*I like the Bob's Red Mill brand a lot. The flours are good quality and finely ground. Amazon is a great place to buy them for a great price.
