If you're not a vegetable lover, try roasting them! For some reason, roasting brings out the most delicious flavor. Almost anything tastes better roasted! This comes together in a snap especially if you've got pre-chopped veggies in the fridge.
The Easiest Roasted Veggies
1 large handful of asparagus, trimmed and chopped
2 cups broccoli florets, chopped
2 cups cauliflower florets, chopped
2 small zucchini, chopped
1 orange bell pepper, sliced
1 yellow bell pepper, sliced
1/4 red onion, sliced
Preheat your oven to 425. Chop all veggies and place in a 9x13 pan. Drizzle with a small amount of Avocado oil (2-4 tablespoons), then sprinkle real salt and oregano on top. Next add about a tablespoon of minced garlic, then stir everything to combine. Place in the heated oven for 25-30 minutes or until the veggies are tender, stirring throughout.
