Guys, this pad thai is amaaaaaaazing!! You don't even miss the noodles. When your plate is almost entirely veggies, you know you're doing something right!
In my family, my kiddos eat what the adults are eating. Sometimes that goes well, sometimes it doesn't. The first time I made this recipe, there were A LOT of complaints. This time, there were still a lot of complaints but my kids actually gave it a shot instead of whining! I kindly encouraged them to eat 5 bites (not just chicken, but with vegetables too) - and I admit, I might have bribed them with picking a toy out of our little prize box - and they all did it! I didn't even have to bribe my baby - he loved it and ate seconds! After 5 bites, my kids liked the meal and though they didn't finish, I was so proud of them for trying something new. It really pays off to serve your kiddos healthy food. Yes there will be complaints and yes there will be tears sometimes, but if you consistently serve them good food, they will come to like it. It is said that food has to be introduced over 15 times for it to be accepted - I have found that to be true! Just keep trying! I've wrote some of my thoughts about feeding kids healthy food HERE. Paleo Pad Thai
5 medium zucchini or squash
2 tablespoons coconut oil
1 tablespoon raw honey
3 tablespoons coconut aminos
1 tablespoon fish sauce
1/4 teaspoon cayenne pepper
1 tablespoon fresh lime juice
1 tablespoon minced garlic
1/2 cup chicken stock
2 large eggs, beaten
2 cups grated carrots
4 green onions, sliced
2-3 precooked chicken breasts, sliced
1/4 cup peanuts, toasted*
1/2 cup cilantro, chopped
Peel and spiralize the zucchini, then place in a strainer in the sink, sprinkle with a moderate amount of Real salt, and let sit for 20 minutes. Squeeze out the excess water with paper towels and set aside.
Make the sauce by combining the honey, coconut aminos, fish sauce, cayenne, lime juice, garlic, and chicken stock in a small bowl.
Heat a large skillet over medium heat, then add coconut oil and beaten eggs. Scramble the eggs until cooked but still moist. Next add the carrots and green onions. Stir and cook for 2-3 minutes. Add the chicken breasts and sauce, then stir to combine. Allow to simmer for 5 minutes and let the liquid reduce slightly. Stir in the spiralized zucchini noodles and cook for 1 minute. Remove promptly from heat.
Serve on plates and top with peanuts and cilantro. Enjoy!
*Omit peanuts for strict Paleo. You can choose to replace the peanuts with cashews, or just go without nuts.
